2 cups (240 g) all purpose flour 1/3 cup (67 g) granulated sugar 2 tsp instant yeast 1/4 tsp ground nutmeg 1/2 tsp fine salt 1 1/4 cups (300 ml) warm water 4 cups (950 ml) neutral oil, for frying 2 tbsp granulated sugar, optional
1. Mix flour, sugar, yeast, nutmeg, and salt. 2. Gradually stir in warm water until a thick smooth batter forms. 3. Cover and leave in a warm place for about 1 hour until doubled and bubbly. 4. Heat 2 to 3 inches oil to 350°F (175°C). 5. Stir the batter once. Drop tablespoon sized portions carefully into the oil. 6. Fry for 3 to 4 minutes, turning as needed, until evenly golden. 7. Drain on paper towels and repeat with remaining batter. 8. Sprinkle lightly with sugar while warm if desired.
SCHNAX TIP
Keep the oil near 350°F (175°C). Oil that is too hot will brown the outside before the center cooks.
