2 lb (900 g) pork shoulder; 8 cups (1.9 L) water; 1 yellow onion; 2 tomatoes; 1 tbsp fish sauce; 1 packet (1.4 oz/40 g) tamarind soup mix or 1/2 cup tamarind puree; 1 daikon radish (8 oz/225 g); 8 oz (225 g) long beans or green beans; 1 small eggplant; 2 green chiles; 4 oz (115 g) water spinach or baby spinach; 1 tsp kosher salt
1. Put pork and water in a large pot and bring slowly to a boil. 2. Skim foam, then add onion and tomatoes. 3. Simmer for 45 to 55 minutes until pork is nearly tender. 4. Add fish sauce and tamarind. 5. Add radish and simmer for 8 minutes. 6. Add beans, eggplant, and chiles and cook for 6 to 8 minutes. 7. Adjust the broth with more tamarind or salt if needed. 8. Add greens and cook for 1 to 2 minutes. 9. Serve with rice.

The broth should taste clearly sour while still savory. Add tamarind gradually until the balance tastes right.
