A soft South African apricot pudding soaked with a warm butter and cream sauce after baking.

1 cup (125 g) all purpose flour 1 tsp baking soda 1/4 tsp fine salt 1 large egg 3/4 cup (150 g) granulated sugar 1 tbsp apricot jam 1 tbsp unsalted butter, melted 1 tsp white vinegar 1/2 cup (120 ml) whole milk 1/2 cup (120 ml) heavy cream 1/2 cup (100 g) granulated sugar, for sauce 6 tbsp (85 g) unsalted butter, for sauce 1/3 cup (80 ml) hot water 1 tsp vanilla extract
1. Heat oven to 350°F (175°C). Butter an 8 inch square dish. 2. Whisk flour, baking soda, and salt. 3. Beat egg and sugar for 2 minutes. Add apricot jam, melted butter, and vinegar. 4. Add dry ingredients in two additions, alternating with milk. 5. Pour into the dish and bake for 35 to 40 minutes. 6. During the last 10 minutes, heat cream, sauce sugar, sauce butter, and hot water until dissolved. Add vanilla. 7. Poke holes across the hot pudding. 8. Slowly pour the hot sauce over it. 9. Rest for 10 minutes and serve warm.

Pour the sauce over the pudding while both are hot so it soaks in evenly.
