2 slices white bread 1 cup (240 ml) whole milk, divided 2 tbsp unsalted butter 1 large yellow onion, diced 2 garlic cloves, minced 1 1/2 lb (680 g) ground beef 1 tbsp mild curry powder 1 tsp ground turmeric 1/2 tsp ground cumin 1/2 tsp ground coriander 1 tsp kosher salt 1/2 tsp black pepper 2 tbsp apricot jam 1 tbsp Worcestershire sauce 1 tbsp fresh lemon juice 1/3 cup (50 g) raisins 1/3 cup (40 g) sliced almonds 2 large eggs 3 bay leaves

Method

1. Heat oven to 350°F (175°C). Soak bread in 1/2 cup milk for 5 minutes. 2. Melt butter in a skillet. Cook onion for 6 minutes and garlic for 30 seconds. 3. Add beef and cook for 7 to 8 minutes. 4. Add curry powder, turmeric, cumin, coriander, salt, and pepper. 5. Squeeze milk from the bread, reserving it, and break the bread into the beef. 6. Add jam, Worcestershire sauce, lemon juice, raisins, and almonds. 7. Spread in a greased 9 inch baking dish. 8. Whisk eggs with remaining fresh milk and reserved soaking milk. Pour over the beef. 9. Put bay leaves on top and bake for 30 to 35 minutes until set. 10. Remove bay leaves before serving.
